A delightful treat that combines rich red velvet cake with light raspberry mousse, perfect for special occasions.

- 2 cups all-purpose flour
- 1 ½ cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 2 cups fresh raspberries (plus extra for garnish)
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 teaspoon gelatin
- 2 tablespoons water
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Sift the flour, sugar, baking soda, and salt together in a large bowl.
- Mix the oil, buttermilk, eggs, cocoa powder, food coloring, vanilla extract, and vinegar in another bowl. Combine with the dry ingredients until fully mixed.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Blend the raspberries until smooth. Strain through a sieve to remove seeds.
- Dissolve gelatin in water in a small bowl and let it sit for a few minutes. Meanwhile, whip the heavy cream with powdered sugar until soft peaks form.
- Fold the raspberry puree and gelatin mixture into the whipped cream gently until combined.
- Once the cakes are completely cool, layer them with raspberry mousse in between. Finish with a layer of mousse on top and garnish with fresh raspberries.
Notes
Store leftovers wrapped in plastic in the refrigerator for 3-5 days. Freezing layers before assembly is also an option.
