Raspberry Red Velvet Mousse Layer Cake

Description

A delightful treat that combines rich red velvet cake with light raspberry mousse, perfect for special occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 cups fresh raspberries (plus extra for garnish)
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon gelatin
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Sift the flour, sugar, baking soda, and salt together in a large bowl.
  3. Mix the oil, buttermilk, eggs, cocoa powder, food coloring, vanilla extract, and vinegar in another bowl. Combine with the dry ingredients until fully mixed.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. Blend the raspberries until smooth. Strain through a sieve to remove seeds.
  7. Dissolve gelatin in water in a small bowl and let it sit for a few minutes. Meanwhile, whip the heavy cream with powdered sugar until soft peaks form.
  8. Fold the raspberry puree and gelatin mixture into the whipped cream gently until combined.
  9. Once the cakes are completely cool, layer them with raspberry mousse in between. Finish with a layer of mousse on top and garnish with fresh raspberries.

Notes

Store leftovers wrapped in plastic in the refrigerator for 3-5 days. Freezing layers before assembly is also an option.
