Ingredients

  • 2 cups vegetable broth or water

  • 1/2 teaspoon pepper
  • 2 cloves garlic, minced
  • 1 onion, diced
  • Various vegetables (e.g., bell peppers, kale, spinach)
  • 1 can beans or legumes (e.g., black beans, chickpeas)
  • 1/4 cup nuts and seeds (e.g., almonds, pumpkin seeds)
  • Herbs and spices (e.g., cumin, paprika, parsley)

Instructions

  1. Rinse quinoa under cold water to eliminate any bitterness.
  2. Combine quinoa and vegetable broth or water in a pot in a 2:1 ratio.
  3. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. Heat olive oil in a skillet and sauté diced onion and garlic until fragrant.
  5. Add chopped vegetables and cook until tender.
  6. Stir in cooked quinoa, beans, and season with salt, pepper, and spices.
