Ingredients

- 2 cups Vegetable broth or water
- 2 tablespoons Olive oil

- 1 Onion, diced

- 1 can Beans or legumes (e.g., black beans, chickpeas)

Instructions
- Rinse quinoa under cold water.
- Combine quinoa and vegetable broth or water in a pot in a 2:1 ratio.
- Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
- Heat olive oil in a skillet, then sauté diced onion and garlic until fragrant.
- Add chopped vegetables and cook until tender.
- Stir in cooked quinoa, beans, and season with salt, pepper, and spices.
