- 1 cup short-grain rice
- 1/2 cup Toor dal (yellow lentils)
- 1 cup mixed vegetables (carrots, beans, peas, potatoes)
- 1/4 cup tamarind extract
- 2 tbsp Pure and Sure Bisi Bele Bath spice mix
- 2 tbsp ghee
- 1 tsp mustard seeds
- 1 tsp curry leaves
- 2 dried red chilies
- Water as needed
Instructions
- Rinse the rice and lentils thoroughly under running water and soak them for 30 minutes.
- Chop the vegetables into small, uniform pieces.
- Soak tamarind in warm water for 10 minutes, then squeeze out the juice.
- Combine soaked rice and lentils with water in a large pot and cook until soft and mushy.
- Cook the chopped vegetables in a separate pan until tender.
- Prepare the spice blend if making your own by dry roasting spices and grinding them into a fine powder.
- Mix together the cooked rice, lentils, and vegetables in a pot.
- Add the tamarind extract and spice blend, stirring well.
- Simmer for a few minutes to allow flavors to meld.
- Temper with ghee, mustard seeds, curry leaves, and dried red chilies before serving.
Notes
Serve with crispy papad and cooling raita for a complete meal. Adjust spice levels to taste.
