Description

A delicious, protein-packed taco pasta dish made with lean ground meat, pasta, and black beans, all in one pot for easy cleanup.


Ingredients

  • 8 oz pasta
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the ground turkey or beef over medium heat until browned. Drain any excess fat.
  3. Stir in the taco seasoning and cook for 1-2 minutes.
  4. Add the black beans, corn, diced tomatoes, and chicken broth to the skillet.
  5. Bring the mixture to a simmer and let it cook for about 5 minutes.
  6. Stir in the cooked pasta and cheese. Mix until the cheese is melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped cilantro.
