Description
Delicious sweet potato boats filled with a protein-rich turkey and black bean mixture, topped with cheese for a satisfying meal.
Ingredients

- 2 large sweet potatoes
- 1 lb ground turkey
- 1 can black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or your choice)
- 1 teaspoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Toppings (sour cream, green onions, avocado – optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Bake them in the preheated oven for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned.
- Stir in cumin, chili powder, salt, and pepper, then add the rinsed black beans. Cook for another 5 minutes until heated through.
- Once the sweet potatoes are done, cut them in half lengthwise and scoop out some of the flesh to create a boat.
- Fill each sweet potato half with the turkey and bean mixture, then top with shredded cheese.
- Return to the oven for an additional 10 minutes or until the cheese is melted.
- Serve warm, adding optional toppings as desired.
Notes
These sweet potato boats can be enjoyed right out of the oven or with your favorite toppings. Store leftovers in an airtight container in the refrigerator for 3-4 days.
