Ingredients

- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 cup oats
- 1 scoop protein powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a muffin tin.
- Mix together the pumpkin puree, Greek yogurt, honey (or maple syrup), and eggs until smooth.
- Combine the oats, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before enjoying!
Notes
Store muffins in an airtight container at room temperature for up to three days or freeze for up to three months. You can add chocolate chips or dried fruit for a sweeter touch.
