Wholesome muffins made with whole wheat flour and protein powder, sweetened naturally and packed with dark chocolate chips.
Ingredients

- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup milk (or non-dairy alternative)
- 1/4 cup dark chocolate chips
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- Combine the dry ingredients: flour, protein powder, oats, baking powder, baking soda, and salt in a mixing bowl.
- Whisk together the wet ingredients: honey, applesauce, milk, vanilla extract, and eggs in another bowl.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the dark chocolate chips gently.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days or freeze for up to three months.
