- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup asparagus, chopped
- 1 cup shredded cheese (parmesan or mozzarella)
- 1/2 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken, season with salt and pepper, and cook until browned and cooked through.
- Stir in the chopped asparagus and cook for another 2-3 minutes.
- Add the orzo and chicken broth, bringing it to a boil before reducing to a simmer.
- Cook until the orzo is tender, about 10 minutes, stirring occasionally.
- Stir in the heavy cream and cheese until melted and well combined.
- Serve hot and enjoy!
Notes
For added flavor, marinate the chicken in your favorite spices. Feel free to substitute asparagus with other veggies, like bell peppers or spinach.
