- 1 can (15 oz) black beans, rinsed and drained

- 1 cup diced tomatoes (fresh or canned)
- 1 avocado, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Start by seasoning the chicken breast with taco seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until it’s fully cooked and no longer pink inside.
- Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into bite-sized pieces.
- In a bowl, layer cooked rice, black beans, corn, diced tomatoes, and sliced avocado.
- Top everything with the sliced chicken and sprinkle shredded cheese on top.
- Garnish with fresh cilantro and serve with lime wedges for an extra kick of flavor.
