Description

A hearty and filling casserole packed with protein, flavor, and perfect for meal prepping.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cooked rice, black beans, corn, salsa, olive oil, cumin, garlic powder, salt, and pepper in a large mixing bowl. Mix well.
  3. Transfer the mixture to a greased baking dish and spread it evenly.
  4. Sprinkle the shredded cheese on top.
  5. Bake in the preheated oven for about 25-30 minutes, until heated through and the cheese is melted.
  6. Optional: Serve with tortilla chips for added crunch.

Notes

Feel free to mix in some chopped bell peppers or onions for extra veggies. Use leftover rotisserie chicken to save time.
