Ingredients

  • 1 cup Chopped Pistachios (plus extra for topping)
  • 1 cup Granulated Sugar
  • 1 1/2 cups Heavy Cream
  • 1/4 cup Rose Water
  • 4 Large Eggs
  • 1/2 cup All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 cup White Chocolate (melted)
  • 1/4 cup Cream Cheese (room temperature)
  • One pinch Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the cake pan.
  2. Sift the dry ingredients together and set aside.
  3. Beat the eggs and granulated sugar until tripled in volume and pale yellow.
  4. Fold in the dry ingredients in 2-3 increments without deflating the batter.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes.
  6. Cool the cake on a wire rack before layering with mousse.
  7. Whip the heavy cream until soft peaks form.
  8. Combine melted white chocolate with cream cheese and fold into the whipped cream.
  9. Spread mousse over the cooled cake and chill for 2-4 hours.
  10. Garnish with crushed pistachios before serving.

Notes

Melt white chocolate in short bursts and ensure cream cheese is at room temperature for smooth incorporation.
