Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup pistachio nuts, ground
  • 1/4 cup almond extract
  • Pistachio nuts for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix crushed graham crackers with melted butter and press the mixture into the bottom of a springform pan.
  3. Combine cream cheese, sugar, and vanilla extract in a large bowl; beat until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, ground pistachios, and almond extract until well combined.
  6. Pour the cheesecake filling over the crust in the pan.
  7. Bake for 50-60 minutes, or until the center is set.
  8. Let cool, then refrigerate for at least 240 minutes before serving.
  9. Garnish with additional pistachio nuts before serving.
