- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted

- 1/4 cup almond extract

Instructions
- Preheat the oven to 325°F (163°C).
- Mix crushed graham crackers with melted butter and press the mixture into the bottom of a springform pan.
- Combine cream cheese, sugar, and vanilla extract in a large bowl; beat until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream, ground pistachios, and almond extract until well combined.
- Pour the cheesecake filling over the crust in the pan.
- Bake for 50-60 minutes, or until the center is set.
- Let cool, then refrigerate for at least 240 minutes before serving.
- Garnish with additional pistachio nuts before serving.
