Description

A soft and festive cake with a light champagne flavor, perfect for celebrations.


Ingredients

  • 2 and 1/2 cups all purpose flour
  • 2 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 and 3/4 cups sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup champagne or sparkling wine
  • 1/2 cup milk or buttermilk
  • Pink food coloring, a few drops
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 to 4 tablespoons champagne or milk (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Heat your oven to 350 F. Grease your pans and line the bottoms with parchment if you can.
  2. In a bowl, whisk flour, baking powder, and salt. Set it aside.
  3. In a larger bowl, beat the butter and sugar until it looks lighter and fluffy.
  4. Add eggs one at a time, mixing after each. Stir in vanilla.
  5. Add the flour mixture in three additions, alternating with the champagne and milk.
  6. Add a couple drops of pink coloring.
  7. Divide the batter into pans and bake about 25 to 32 minutes.
  8. Cool in pans for 10 minutes, then turn out onto a rack to cool completely.
  9. Beat butter until creamy for frosting. Add powdered sugar gradually, along with champagne or milk.
  10. Frost your cooled cake and decorate as desired.

Notes

Use a bottle of champagne that you would drink, but it doesn’t have to be expensive. The cake can be made ahead by preparing the layers one day and frosting them the next.
