  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup crushed pineapple, drained
  • 2 tbsp instant vanilla pudding mix
  • 2 tbsp finely chopped pistachios
  • 2 cups whipped cream
  • 1 cup pineapple chunks
  • 1/4 cup crushed pistachios
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F. Grease and line a 9-inch round cake pan.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. Add eggs, milk, melted butter, and vanilla extract. Mix until smooth and creamy.
  4. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool completely before slicing horizontally into two layers.
  6. Beat the cream cheese and powdered sugar until smooth to make the pineapple cream filling.
  7. Whip the heavy cream until fluffy peaks form in a separate bowl, then gently fold it into the cream cheese mixture.
  8. Fold in the crushed pineapple, vanilla pudding mix, and chopped pistachios until thick and creamy.
  9. Spread the pineapple cream filling between the cake layers and over the top of the cake.
  10. Pipe or spread whipped cream around the edges for a bakery-style look.
  11. Top with pineapple chunks, crushed pistachios, and a generous caramel drizzle.
  12. Chill the cake for at least 1 hour before serving to enhance the filling’s creaminess.

Notes

Use fresh pineapple for best flavor, and consider adding more chopped pistachios for extra crunch.
