Ingredients

  • 2 tablespoons Butter (Melted)
  • 1 package (8 oz) Cream Cheese (softened)
  • 1 cup Heavy Whipping Cream (ice-cold)
  • 1 cup Crushed Pineapple (drained)
  • ½ cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • ¼ cup Coconut Flakes (optional, for topping)

Instructions

  1. Lightly grease an 8-inch springform pan and chill.
  2. Combine ½ cup crushed graham crackers and 2 tablespoons melted butter, then press into the pan.
  3. Beat 8 oz softened cream cheese with ½ cup sugar and 1 teaspoon vanilla until smooth.
  4. Add 1 cup crushed pineapple and fold into the cream cheese mixture.
  5. Whip 1 cup cold heavy whipping cream to stiff peaks.
  6. Gently fold the whipped cream into the pineapple mixture.
  7. Pour the mousse filling into the prepared crust and smooth the top.
  8. Cover and refrigerate for at least 4 hours until set.
  9. Serve with toasted coconut flakes on top, if desired.

Ensure pineapple is well-drained for best results. Can be frozen for up to 1 month.
