- 1 cup heavy whipping cream
- 1/2 cup sugar
- 1/4 cup cream cheese, softened
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin powder
- 1/4 cup cold water
- 1 pre-made cake layer or sponge cake
Instructions
- Sprinkle the gelatin powder over cold water and let it bloom for about 5 minutes.
- Gently heat the mixture until the gelatin dissolves completely. Set aside to cool.
- Whip the heavy cream in a mixing bowl until soft peaks form, then gradually add the sugar while continuing to whip until stiff peaks form.
- Combine the softened cream cheese and vanilla extract in another bowl. Mix until smooth.
- Stir in the cooled gelatin mixture and crushed pineapple into the cream cheese mixture until well combined.
- Gently fold in the whipped cream into the pineapple mixture until no streaks remain.
- Place the cake layer on a serving plate and spread the mousse evenly on top.
- Refrigerate for at least 240 minutes or until set.
Notes
Ensure that the pineapple is well-drained to avoid excess liquid. For a sweeter mousse, adjust the sugar to your taste.
