Piña Colada Cheesecake Mousse

Description

A light and creamy mousse that combines the tropical flavors of pineapple and coconut, perfect for summer gatherings.


Ingredients

  • 9 graham cracker sheets, crushed
  • 1 1/2 cups sweetened shredded coconut
  • 2 teaspoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 1/4 cups heavy whipping cream
  • 1 cup powdered sugar, divided
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract, divided
  • 1/2 cup fresh pineapple, finely diced
  • Fresh pineapple wedges, for garnish
  • Maraschino cherries, for garnish
  • Extra toasted coconut or crumble, for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the graham crackers into fine crumbs and mix them with the shredded coconut, sugar, and melted butter. Spread the mixture on a baking sheet and bake for 8-10 minutes until golden. Let cool.
  2. Beat the heavy cream in another bowl until thick, then add 1/2 cup powdered sugar and 1/2 teaspoon vanilla.
  3. Combine the whipped cream with the cream cheese mixture which you have prepared by beating the cream cheese until smooth along with the remaining powdered sugar and vanilla, and folding in the diced pineapple.
  4. Layer the crumble in glasses, add mousse, and top with whipped cream. You can garnish with pineapple, cherries, and extra crumble. Serve immediately or chill for up to 1 hour.

Notes

For a tropical twist, add a splash of rum or substitute pineapple with mango. Store in an airtight container in the refrigerator for 3-4 days.
