Description

A nostalgic dessert that transforms a beloved childhood classic into a sophisticated cheesecake with a rich peanut butter core and swirls of sweet strawberry preserves.


Ingredients

  • 2 cups graham cracker crumbs (about 1416 full-sheet graham crackers)
  • 6 tablespoons unsalted butter, melted
  • 4 packages (32 ounces total) full-fat cream cheese, softened
  • 1 cup smooth peanut butter
  • ¾ cup granulated white sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons pure vanilla extract
  • ¾ cup heavy whipping cream
  • 3 large eggs, room temperature
  • 1 ½ cups high-quality strawberry topping or seedless preserves, warmed
  • Whipped cream for garnish
  • Extra strawberry topping for drizzle
  • ¼ cup roasted peanuts, finely chopped

Instructions

  1. Preheat your oven to 175°C (350°F) and lightly grease a 9-inch springform pan.
  2. Pulse graham crackers in a food processor until fine, then mix with melted butter.
  3. Press the mixture into the bottom of the pan and up the sides to form a crust.
  4. Bake the crust for 10 minutes and set aside to cool.
  5. Beat cream cheese and peanut butter in a stand mixer until smooth.
  6. Add sugar and flour, mixing on high until fully incorporated.
  7. Pour in heavy cream and vanilla, then mix again until smooth.
  8. Add eggs one at a time, mixing until just combined.
  9. Pour half of the batter over the crust, drizzle with half the strawberry preserves, and swirl.
  10. Layer the remaining peanut butter batter on top and repeat the drizzle and swirl.
  11. Bake at high heat for 15 minutes, then reduce the oven temperature to 93°C (200°F) and bake for another 50 to 55 minutes.
  12. Let the cheesecake rest in the oven for 15 minutes before removing.
  13. Cool completely at room temperature, then refrigerate overnight.
  14. Garnish with whipped cream, extra strawberry topping, and chopped peanuts before serving.

Notes

For the best results, chill the cheesecake overnight to allow the flavors to meld and the texture to firm up.
