- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup milk
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
- Peanut butter cups for filling
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
- Sift together the flour, cocoa powder, and baking powder in a bowl.
- Beat the eggs and sugar together until light and fluffy in another bowl.
- Gradually mix the dry ingredients into the egg mixture, alternating with the milk.
- Pour the batter into the prepared pan, smoothing it out evenly.
- Bake for 10-12 minutes, or until a toothpick comes out clean.
- Cool on a wire rack for a bit once baked.
- Spread peanut butter over the cake and sprinkle chopped peanut butter cups on top.
- Roll the cake from one end to the other using the parchment paper.
- Wrap it in plastic wrap and refrigerate for at least 1 hour.
- Dust with powdered sugar just before slicing and serving.
