Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting
  • Peanut butter cups for filling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. Sift together the flour, cocoa powder, and baking powder in a bowl.
  3. Beat the eggs and sugar together until light and fluffy in another bowl.
  4. Gradually mix the dry ingredients into the egg mixture, alternating with the milk.
  5. Pour the batter into the prepared pan, smoothing it out evenly.
  6. Bake for 10-12 minutes, or until a toothpick comes out clean.
  7. Cool on a wire rack for a bit once baked.
  8. Spread peanut butter over the cake and sprinkle chopped peanut butter cups on top.
  9. Roll the cake from one end to the other using the parchment paper.
  10. Wrap it in plastic wrap and refrigerate for at least 1 hour.
  11. Dust with powdered sugar just before slicing and serving.
