Description

A delightful combination of creamy cheesecake and sweet, spiced peaches that impresses at any gathering.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh peaches, sliced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup peach preserves

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, melted butter, and brown sugar in a bowl. Press this mixture into the bottom of the prepared pan to form a crust.
  3. Beat the cream cheese until smooth in another bowl. Add the sugar and vanilla, mixing until fully combined.
  4. Add the eggs one by one, mixing well after each addition. Pour this mixture over the crust.
  5. Toss the sliced peaches with cinnamon and nutmeg in a separate bowl. Layer this peach mixture on top of the cheesecake batter.
  6. Spoon the peach preserves over the top of the peach layer.
  7. Bake for about 60 minutes or until the center is set.
  8. Let it cool at room temperature, then refrigerate for at least 240 minutes before serving.

Notes

For an extra touch, serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the refrigerator for up to 5 days.
