A refreshing no-bake cheesecake bursting with fruity flavors from fresh peaches and blueberries, perfect for warm weather gatherings.

  • 1/2 cup unsalted butter, melted (113 g)
  • 2 tbsp granulated sugar (25 g)
  • 16 oz cream cheese, softened (452 g)
  • 1 cup powdered sugar (120 g)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 1/2 cups heavy whipping cream, whipped (360 ml)
  • 1 1/2 cups fresh blueberries (225 g)
  • 2 ripe peaches, diced (about 300 g)
  • 2 cups fresh blueberries (300 g)
  • 2 tbsp granulated sugar (25 g)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • Fresh peach slices for garnish
  • Fresh blueberries for garnish
  • Mint leaves for garnish

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl until evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
  2. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, and lemon juice. Beat until silky smooth.
  3. Gently fold in the whipped cream until light and fluffy. Fold in the fresh blueberries and diced peaches, distributing them evenly throughout the filling.
  4. Spread the mixture over the prepared crust and smooth the top. Refrigerate for at least 240 minutes.
  5. For the blueberry topping, combine blueberries, sugar, and lemon juice in a saucepan over medium heat. Cook until berries begin to burst. Stir in the cornstarch slurry and cook for 1-2 minutes until slightly thickened. Cool completely.
  6. Spread the blueberry topping over the chilled cheesecake and refrigerate for another 120 minutes or until fully set.
  7. Garnish with fresh peach slices, blueberries, and mint leaves before serving.

Notes

Use fully ripened peaches for the best flavor. Make sure your cream cheese is at room temperature to avoid lumps in the filling.
