Instructions
- Preheat your oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl.
- Beat the softened butter and sugar in a large mixing bowl until light and fluffy. Add the eggs one by one, then mix in the vanilla extract.
- Alternate adding the dry ingredients with the milk and sour cream until the batter is smooth and creamy.
- Divide the batter evenly between the prepared cake pans and bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake layers cool completely before decorating.
- Beat the softened butter for the buttercream frosting until creamy and fluffy. Gradually mix in powdered sugar, heavy cream, vanilla, and salt until thick and smooth.
- Divide the frosting into separate bowls and tint each bowl with pastel food coloring.
- Frost the cake with a thin crumb coat and chill for about 15 minutes to set.
- Pipe colorful buttercream swirls, rosettes, and stars all over the cake for a beautiful finish.
- Top the cake with pastel sprinkles and sugar pearls for an extra whimsical touch.
- Serve this pastel swirl cake chilled or at room temperature for the softest, creamiest bite.
