Ingredients

  • 1 cup coconut flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 1/2 cups heavy cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup passion fruit puree
  • 2 tablespoons gelatin
  • 1/4 cup water
  • Tropical glaze (optional, based on preference)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together coconut flour, shredded coconut, sugar, melted butter, and salt until combined.
  3. Press the mixture into the bottom of a greased cake pan to form the crust.
  4. Bake the crust for about 10-12 minutes or until lightly golden. Let it cool.
  5. Whip the heavy cream in a separate bowl until soft peaks form.
  6. Combine sweetened condensed milk and passion fruit puree in another bowl until well mixed.
  7. Dissolve gelatin in 1/4 cup of water, then heat gently until dissolved.
  8. Stir the dissolved gelatin into the passion fruit mixture, then fold in the whipped cream until well blended.
  9. Pour the mousse over the cooled coconut crust and chill in the fridge for at least 240 minutes until set.
  10. Prepare a tropical glaze using fruit puree or glaze as desired before serving.

Notes

For best texture, let the mousse set completely in the fridge. Use fresh fruit puree for a more intense flavor.
