- 1 cup coconut flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 1 1/2 cups heavy cream
- 1 can (14 oz) sweetened condensed milk
- 1 cup passion fruit puree
- 2 tablespoons gelatin
- 1/4 cup water
- Tropical glaze (optional, based on preference)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together coconut flour, shredded coconut, sugar, melted butter, and salt until combined.
- Press the mixture into the bottom of a greased cake pan to form the crust.
- Bake the crust for about 10-12 minutes or until lightly golden. Let it cool.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Combine sweetened condensed milk and passion fruit puree in another bowl until well mixed.
- Dissolve gelatin in 1/4 cup of water, then heat gently until dissolved.
- Stir the dissolved gelatin into the passion fruit mixture, then fold in the whipped cream until well blended.
- Pour the mousse over the cooled coconut crust and chill in the fridge for at least 240 minutes until set.
- Prepare a tropical glaze using fruit puree or glaze as desired before serving.
Notes
For best texture, let the mousse set completely in the fridge. Use fresh fruit puree for a more intense flavor.
