Description

A cool and creamy orange-flavored pie that’s perfect for hot summer days, reminiscent of childhood ice cream treats.


Ingredients

  • 1 graham cracker crust (store bought or homemade)
  • 1 small box (about 3 ounces) orange flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water or ice water
  • 1 small box instant vanilla pudding mix
  • 1 tub (8 ounces) whipped topping (like Cool Whip, thawed)
  • Optional: orange zest, a little vanilla, mandarin oranges for garnish

Instructions

  1. In a medium bowl, stir the orange gelatin into boiling water until it fully dissolves.
  2. Stir in cold water and let the mixture sit for about 10 minutes to cool down.
  3. Whisk in the instant vanilla pudding mix until thickened.
  4. Let that bowl sit for a few minutes until it is thickened but still stirrable, then fold in the whipped topping gently.
  5. Spoon the filling into the graham crust and smooth the top.
  6. Pop it in the fridge for at least 4 hours, overnight for best results.
  7. Slice and serve cold, garnishing with orange zest or whipped topping if desired.

Notes

Store leftovers in the fridge for up to 4 days. For firmer slices, freeze for 1-2 hours before serving.
