Description

An intensely rich, decadent no-bake dessert featuring a buttery Oreo crust and a silky chocolate cheesecake filling topped with a fudgy ganache.


Ingredients

  • 2 cups Oreo Cookie Crumbs
  • 5 tablespoons Unsalted Butter, melted
  • 8 oz Semi-Sweet Chocolate
  • ½ cup Heavy Cream (for filling ganache)
  • 24 oz Cream Cheese, softened
  • ½ cup Granulated Sugar
  • ⅓ cup Unsweetened Cocoa Powder, sifted
  • 1 teaspoon Vanilla Extract
  • 1 cup Heavy Cream, ice-cold
  • ⅓ cup Powdered Sugar
  • 6 oz Bittersweet Chocolate, finely chopped
  • ½ cup Heavy Cream (for topping)

Instructions

  1. Cut and line a 9-inch springform pan with parchment paper along the bottom and sides.
  2. Mix the Oreo cookie crumbs with the melted butter until it resembles wet sand.
  3. Press the mixture firmly into the bottom of the springform pan and refrigerate.
  4. Heat the heavy cream in a saucepan until it simmers.
  5. Pour the hot cream over the semi-sweet chocolate and let sit before stirring until smooth.
  6. Beat the softened cream cheese until smooth; add sugar, cocoa powder, and vanilla, beating until fluffy.
  7. Whip the ice-cold heavy cream with powdered sugar until stiff peaks form.
  8. Gradually pour the cooled ganache into the cream cheese mixture and beat until combined.
  9. Fold the whipped cream gently into the chocolate mixture.
  10. Spread the cheesecake filling over the chilled crust and refrigerate for at least 6 hours.
  11. Heat the remaining heavy cream for the topping and pour it over the chopped bittersweet chocolate.
  12. Let the ganache cool, then spread it over the cheesecake and garnish as desired.

Notes

For best results, ensure cream cheese is at room temperature and always sift cocoa powder. Can be made ahead and stored in the fridge for up to 4-5 days.
