A delightful no-bake dessert combining the tartness of Goumi berries with a creamy filling and a buttery crust.
Ingredients

- 2 cups Goumi berries (fresh or frozen)
- 1 cup sugar
- 2 tablespoons cornstarch or gelatin
- 2 tablespoons lemon juice
- 4 tablespoons butter (melted)
- 1 1/2 cups graham crackers or shortbread cookies (crushed)
- Whipped cream (optional)
- 1 teaspoon vanilla extract (optional)
Instructions
- Crush the crackers or cookies into fine crumbs.
- Mix the crushed cookies with melted butter until it resembles wet sand.
- Press the mixture into a pie dish to form the crust.
- Chill the crust in the refrigerator for at least 30 minutes to set.
- Prepare the Goumi berries by rinsing (if fresh) or thawing (if frozen).
- Combine Goumi berries, sugar, cornstarch or gelatin, and lemon juice in a saucepan.
- Stir the mixture over medium heat until it thickens and the berries break down.
- Cool the thickened filling to room temperature.
- Pour the cooled filling into the chilled crust and spread evenly.
- Top with whipped cream and/or fresh berries if desired.
- Chill the pie for at least 2-4 hours, or overnight for best results.
Notes
For a richer flavor, consider a chocolate cookie crust or mix in other berries.
