Description

A delightful no-bake dessert combining the tartness of Goumi berries with a creamy filling and a buttery crust.


Ingredients

  • 2 cups Goumi berries (fresh or frozen)
  • 1 cup sugar
  • 2 tablespoons cornstarch or gelatin
  • 2 tablespoons lemon juice
  • 4 tablespoons butter (melted)
  • 1 1/2 cups graham crackers or shortbread cookies (crushed)
  • Whipped cream (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Crush the crackers or cookies into fine crumbs.
  2. Mix the crushed cookies with melted butter until it resembles wet sand.
  3. Press the mixture into a pie dish to form the crust.
  4. Chill the crust in the refrigerator for at least 30 minutes to set.
  5. Prepare the Goumi berries by rinsing (if fresh) or thawing (if frozen).
  6. Combine Goumi berries, sugar, cornstarch or gelatin, and lemon juice in a saucepan.
  7. Stir the mixture over medium heat until it thickens and the berries break down.
  8. Cool the thickened filling to room temperature.
  9. Pour the cooled filling into the chilled crust and spread evenly.
  10. Top with whipped cream and/or fresh berries if desired.
  11. Chill the pie for at least 2-4 hours, or overnight for best results.

Notes

For a richer flavor, consider a chocolate cookie crust or mix in other berries.
