  • 1 1/4 cups powdered sugar
  • 3 cups cold heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon coconut extract (optional)
  • 2/3 cup shredded coconut
  • 2436 Marie biscuits or graham crackers
  • 1/2 cup canned coconut milk
  • 1/2 cup toasted shredded coconut
  • 1 1/2 cups cold heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons toasted shredded coconut

Instructions

  1. In a large mixing bowl, beat the cold cream cheese and powdered sugar until smooth and creamy.
  2. Add the cold heavy whipping cream, vanilla extract, and coconut extract (if using). Beat until thick, fluffy, and stiff peaks form.
  3. Fold in the shredded coconut until evenly distributed.
  4. Lightly dip each graham cracker or Marie biscuit into the coconut milk and arrange a single layer in the bottom of a 9×13-inch baking dish.
  5. Spread about one-third of the coconut cream over the crackers, creating an even layer about 1/2 inch thick.
  6. Sprinkle with some of the toasted shredded coconut.
  7. Repeat the layers of coconut-soaked crackers, coconut cream, and toasted coconut until you reach about 1 inch from the top of the pan.
  8. For the topping, beat the heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
  9. Spread the whipped cream evenly over the cake and sprinkle generously with the remaining toasted coconut.
  10. Cover and refrigerate for at least 24 hours. Slice and serve chilled for the best texture and flavor.
