- 1.5 cups Graham cracker crumbs
- 0.5 cups Unsalted butter, melted
- 0.25 cups Granulated sugar
- 16 oz Cream cheese, softened
- 1 cup Powdered sugar
- 1 tsp Vanilla extract
- 1 cup Heavy whipping cream
- 2 cups Fresh strawberries, hulled and sliced
- 0.25 cups Granulated sugar
- 2 tbsp Lemon juice
- 1 tbsp Cornstarch
- 0.5 cups Water
Instructions
- Prepare the crust: Mix Graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a 9-inch springform pan.
- Make the cheesecake filling: In a bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.
- Whip the cream: In another bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cream cheese mixture.
- Layer the strawberries: In a saucepan, combine strawberries, sugar, lemon juice, cornstarch, and water. Cook over medium heat until thickened. Remove from heat and let it cool slightly.
- Assemble the cheesecake: Spread half of the cheesecake filling over the crust, followed by half of the strawberry mixture. Repeat with the remaining cheesecake filling and strawberries.
- Chill: Refrigerate for at least 240 minutes to set before serving.

Use fresh strawberries for the best flavor and allow the cheesecake to set for a firmer texture.
