Description
Recreate Red Robin’s iconic Mud Pie at home with layers of chocolate and coffee ice cream, rich fudge, and a crunchy cookie crust.
Ingredients

- 1 ½ cups chocolate cookie crumbs (like Oreo)
- ¼ cup melted butter
- 1 quart coffee ice cream (softened)
- 1 quart chocolate ice cream (softened)
- 1 cup chocolate fudge sauce
- 1 cup whipped cream
- Chocolate syrup or fudge sauce (for topping)
- Whipped cream (for topping)
- Chocolate shavings or sprinkles (for topping)
- Chopped nuts (optional)
Instructions
- Crush the cookies into fine crumbs.
- Mix the crumbs with melted butter until evenly coated.
- Press the crumb mixture into the bottom of a springform pan
- Chill the crust in the refrigerator.
- Soften the coffee and chocolate ice creams.
- Layer coffee ice cream over the chilled crust.
- Add a layer of chocolate ice cream.
- Drizzle warm fudge sauce over the layers.
- Freeze the pie for at least 2-3 hours.
- Remove from the freezer and spread whipped cream on top.
- Add chocolate syrup, shavings, and optional nuts.
- Final freeze for another 30 minutes.
