- 1 cup brewed coffee
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 cup heavy cream
- 4 ounces bittersweet chocolate, melted
- 3 large eggs, separated
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
- Combine the brewed coffee, sugar, and cocoa powder in a bowl; mix well.
- Beat the egg yolks in a separate bowl, then add the melted chocolate, vanilla extract, and the coffee mixture. Mix until smooth.
- Whip the cream in another bowl until soft peaks form.
- Fold the whipped cream into the chocolate mixture.
- Beat the egg whites with salt in a clean bowl until stiff peaks form. Gently fold the egg whites into the mousse mixture.
- Pour the mixture into the prepared cake pan.
- Bake for about 25-30 minutes until set.
- Let cool before serving.
Notes
Make sure to let the coffee cool before mixing with the other ingredients to prevent curdling. Try different chocolates for varied sweetness.
