Description

Delightful mini desserts combining creamy cheesecake with fresh strawberries, served in charming cups.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 cups cold heavy whipping cream
  • 4 cups fresh strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 cups crushed vanilla wafers or graham crackers
  • 4 tablespoons unsalted butter, melted
  • 12 fresh strawberry halves
  • Fresh mint leaves (optional)

Instructions

  1. Combine the diced strawberries with the granulated sugar and lemon juice. Let them sit for 15–20 minutes until juicy.
  2. Stir the melted butter into the crushed vanilla wafers or graham cracker crumbs until evenly coated.
  3. Beat the cream cheese in a large bowl until smooth. Add the powdered sugar, vanilla, and lemon juice, then beat until creamy.
  4. Whip the cold heavy cream in a separate bowl to stiff peaks.
  5. Fold the whipped cream into the cream cheese mixture until light and fluffy.
  6. Spoon or pipe a small layer of cookie crumbs into each dessert cup. Add a layer of cheesecake filling.
  7. Spoon in a layer of the macerated strawberries. Repeat the layers until each cup is filled, finishing with a swirl of cheesecake filling on top.
  8. Garnish each shooter with a strawberry half and a small mint leaf.
  9. Chill for at least 120 minutes before serving for the best texture and flavor.
