Description

Delightful mini cheesecakes featuring chocolate, red velvet, and strawberry flavors, perfect for any occasion.


Ingredients

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate cookie crumbs
  • 1 1/2 cups red velvet cake crumbs
  • 6 tbsp unsalted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Mini chocolate chips for garnish
  • 1/2 cup strawberry sauce or preserves
  • Red food coloring swirl (optional)
  • Extra red velvet cake crumbs for topping

Instructions

  1. Preheat oven to 325°F and line a muffin tin or mini cheesecake molds with liners.
  2. Mix cookie crumbs and melted butter until combined. Press into the bottoms of the molds to create the crust layer.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, then mix in sour cream and vanilla extract until silky smooth.
  4. Divide the cheesecake batter evenly into the molds. For the strawberry swirl cheesecakes, spoon strawberry sauce onto the tops and swirl gently with a toothpick.
  5. Bake for 18–22 minutes until the centers are just set. Cool completely, then chill for at least 3 hours.
  6. For the chocolate cheesecakes, heat heavy cream and pour over chocolate chips. Stir until glossy and smooth, then spread over chilled cheesecakes.
  7. Sprinkle mini chocolate chips over the chocolate cheesecakes while the ganache is still soft.
  8. Coat the tops of the red velvet cheesecake bites with fine red velvet cake crumbs. Arrange all mini cheesecake flavors on a serving tray.

Notes

Make sure your cream cheese is softened for easy mixing. Experiment with different toppings for variety.
