- 1 cup All-purpose flour
- 1/2 cup Sugar
- 1/2 cup Unsalted butter, softened
- 2 Large eggs
- 1/2 cup Milk
- 1 tsp Baking powder
- 1 tsp Vanilla extract
- a pinch Salt
- 2 Ripe mangoes, pureed (about 1 cup of puree)
- 1 cup Heavy cream
- 1/2 cup Sugar
- 2 tsp Gelatin powder
- 3 tbsp Cold water
- 1 tsp Vanilla extract
- to taste Fresh mango slices
- to taste Mint leaves (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, mix flour, sugar, baking powder, and salt together.
- In another bowl, cream butter and sugar until light. Add eggs, milk, and vanilla.
- Gradually combine the wet and dry ingredients. Mix until smooth.
- Fold in the mango puree gently.
- Pour the batter into the prepared pan and bake for about 25-30 minutes. Check for doneness with a toothpick.
- While the cake cools, prepare the mousse: in a saucepan, dissolve gelatin in cold water. Allow it to sit for a few minutes before heating gently to dissolve completely.
- Whip the heavy cream with sugar and vanilla until soft peaks form. Gently fold in the mango puree and gelatin mixture.
- Once the cake is cooled, spread the mousse over the top and refrigerate until set.
- Decorate with fresh mango slices and mint leaves before serving.
Notes
Use ripe mangoes for the best flavor; ensure cream is well chilled before whipping.
