Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsweetened shredded coconut
  • 1 cup coconut milk
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 ripe mangoes, pureed
  • 1/2 cup heavy cream
  • 1 tablespoon gelatin
  • 1 cup tropical fruit juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the coconut milk, vanilla extract, and shredded coconut.
  5. Combine the flour, baking powder, and salt in a separate bowl. Gradually add this mixture to the butter mixture; mix until just combined.
  6. Divide the batter between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks.
  8. Heat mango puree in a small saucepan until warm; dissolve gelatin in it. Pour into a mold and refrigerate until set.
  9. Combine tropical juice and cornstarch in a saucepan and bring to a boil, stirring until thickened for the tropical glaze.
  10. Layer the cooled cakes with the mango insert, frost with whipped heavy cream, and drizzle the glaze on top. Serve chilled.

Notes

Use ripe mangoes for the best flavor. Store in an airtight container in the refrigerator to maintain freshness.
