- 1 cup sugar
- 3/4 cup heavy cream

- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1/4 cup sugar
Instructions
- Preheat the oven to 350°F (175°C) and combine the graham cracker crumbs, melted butter, and sugar in a bowl.
- Press this mixture into the bottom of a springform pan to create the crust.
- Bake for 8-10 minutes and let cool.
- Sprinkle the gelatin over the water in a small bowl and let it sit for a few minutes until it softens.
- Mix the lemon juice and sugar in a saucepan over medium heat until dissolved.
- Add the gelatin mixture and stir until fully liquid; remove from heat.
- Whisk the eggs in a mixing bowl until frothy, then slowly add the lemon mixture while whisking continuously.
- Allow it to cool slightly.
- Whip the heavy cream in another bowl until soft peaks form.
- Fold the whipped cream into the lemon mixture until combined.
- Pour the lemon mousse over the cooled crust in the springform pan.
- Refrigerate for at least 240 minutes, or until fully set.
- Serve chilled, garnished with fresh lemon zest if desired.

Use fresh lemons for enhanced flavor; don’t overmix when folding the whipped cream.
