- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 cup lemon juice (freshly squeezed)
- 4 eggs (separated)
- 1 teaspoon lemon zest
- 1 tablespoon gelatin
- 2 tablespoons cold water
Instructions
- Prepare the crust: Mix the graham cracker crumbs and melted butter in a bowl, then press this mixture into the bottom of a springform pan to form the crust. Bake it in a preheated oven at 350Β°F (175Β°C) for about 10 minutes, then let it cool.
- Make the mousse: In a small bowl, sprinkle gelatin over cold water and let it bloom. Then, in a saucepan, whisk egg yolks, sugar, and lemon juice over low heat until thick. Remove from heat, stir in the gelatin mixture, and let it cool slightly.
- Whip the cream: In another bowl, whip the heavy cream until soft peaks form.
- Combine: Once the lemon mixture has cooled, fold it into the whipped cream gently until fully combined.
- Assemble: Pour the mousse over the cooled crust in the springform pan. Smooth the top and refrigerate for at least 240 minutes or overnight to set.
- Serve: Once set, garnish with fresh lemon zest or berries. Enjoy your cake!
