- 1/3 cup fresh lemon juice (80ml)
- 1 tbsp lemon zest
- 4 tbsp unsalted butter (55g)
- 1 1/2 cups heavy whipping cream (360ml), cold
- 1/4 cup powdered sugar (30g)
- 1 tsp vanilla extract
- Lemon slices or lemon zest curls for garnish
- Powdered sugar for dusting
Instructions
- Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide.
- Beat the egg whites in a clean mixing bowl until soft peaks form.
- Slowly add the sugar, one spoonful at a time, beating until the meringue becomes thick, glossy, and holds stiff peaks.
- Fold in the cornstarch, vinegar, and vanilla extract gently.
- Spoon the meringue onto the prepared baking sheet, shaping it into a tall round with slightly raised edges.
- Bake for 1 hour and 15 minutes until dry on the outside.
- Turn the oven off and let the pavlova cool completely inside the oven with the door slightly cracked.
- Whisk egg yolks, 1/2 cup sugar, lemon juice, and lemon zest together in a saucepan over medium-low heat.
- Stir constantly until thickened, then remove from heat and whisk in the butter until silky smooth.
- Chill the lemon curd completely before assembling.
- Whip the heavy cream, powdered sugar, and vanilla in a chilled bowl until fluffy soft peaks form.
- Spoon the lemon curd over the cooled pavlova, then pile on generous swirls of whipped cream.
- Finish with lemon slices, extra zest, and a light dusting of powdered sugar, then serve immediately.

Ensure your mixing bowl is completely clean for stable egg whites. Avoid opening the oven door frequently while baking.
