- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
- 1 cup strawberry puree
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- Bake the crust for 8-10 minutes, then let it cool.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip heavy cream until soft peaks form, then fold it into the cream cheese mixture.
- Pour half of the cheesecake mixture over the crust and spread evenly.
- Layer half of the sliced strawberries on top; pour the remaining cheesecake mixture over and smooth it out.
- Add the strawberry puree on top and swirl it gently with a knife.
- Refrigerate for at least 240 minutes or until set.
- Serve with remaining strawberries on top.
Notes
Make sure your cream cheese is at room temperature to avoid lumps. Fresh strawberries work best, but frozen can be used if thawed and drained well.
