A versatile, umami-rich Japanese BBQ sauce perfect for grilling, stir-frying, or as a dipping sauce.
Ingredients

- ½ cup soy sauce
- ¼ cup mirin
- ¼ cup sugar or honey
- 1 clove garlic, minced
- 1 inch ginger, grated
- 2 tbsp sake (optional)
- 1 tsp sesame oil (optional)
Instructions
- Combine Ingredients: In a small saucepan, combine the soy sauce, mirin, and sugar (or honey). Stir over medium heat until the sugar is completely dissolved.
- Add Aromatics: Add the minced garlic and grated ginger to the mixture. If you’re using sake or sesame oil, add them now as well.
- Simmer: Reduce the heat to low and let the mixture simmer for about 10 minutes, stirring occasionally. The sauce should thicken slightly but not become too thick, as it will continue to thicken as it cools.
- Cool and Store: Remove from heat and let the sauce cool before using. You can store any leftover sauce in an airtight container in the refrigerator for up to two weeks.
