Instructions

  1. Prepare the dough: If using store-bought croissant dough, follow the package instructions for rolling out the dough. If making from scratch, be sure to laminate the dough by folding butter into it several times to create layers.
  2. Make the almond filling: In a bowl, combine almond paste (or marzipan), butter, sugar, and eggs. Blend until smooth.
  3. Shape the croissants: Roll out the dough into triangles, spread a layer of the almond filling and roll them up into croissant shapes.
  4. Bake the croissants: Brush with an egg wash, sprinkle sliced almonds, and bake at 375°F (190°C) for about 15-20 minutes or until golden brown.
