  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add the vegetable oil and eggs, and mix until well combined.
  4. Stir in the grated carrots and walnuts if using.
  5. Pour the batter into greased cake pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool completely before frosting.
  8. For the frosting, beat the cream cheese and butter together until smooth.
  9. Gradually add powdered sugar and mix on low speed until combined.
  10. Add vanilla extract and mix until fluffy.
  11. Spread the cream cheese frosting on the cooled cake.

Notes

Chill the cake before frosting to prevent the frosting from melting.
