- 2 cups granulated sugar
- 1 teaspoon baking powder

- 4 large eggs
- 3 cups grated carrots
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add the vegetable oil and eggs, and mix until well combined.
- Stir in the grated carrots and walnuts if using.
- Pour the batter into greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely before frosting.
- For the frosting, beat the cream cheese and butter together until smooth.
- Gradually add powdered sugar and mix on low speed until combined.
- Add vanilla extract and mix until fluffy.
- Spread the cream cheese frosting on the cooled cake.
Notes
Chill the cake before frosting to prevent the frosting from melting.
