Description

Delicious mini cheesecakes made with Biscoff cookies and a creamy filling, perfect for any occasion.


Ingredients

  • 2 cups Biscoff cookie crumbs
  • 5 tbsp unsalted butter, melted
  • 1 tbsp honey
  • 14 oz (400g) full-fat cream cheese, softened
  • 3/4 cup smooth Biscoff spread
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 3/4 cup cold heavy whipping cream
  • 1/3 cup smooth Biscoff spread (for topping)
  • 6 Biscoff cookies, halved (for topping)
  • 2 tbsp crushed Biscoff cookies (for topping)
  • 1 tbsp caramel sauce, for drizzling (optional)

Instructions

  1. Line a 12-cup muffin pan with paper liners.
  2. Mix the Biscoff cookie crumbs, melted butter, and honey until the mixture resembles wet sand.
  3. Divide the crust mixture evenly among the liners and press firmly into the bottoms. Refrigerate for 20 minutes to firm up.
  4. Beat the softened cream cheese until smooth and creamy in a large bowl.
  5. Add the Biscoff spread, powdered sugar, vanilla extract, and honey. Beat until silky and fully combined.
  6. Whip the heavy cream in a separate chilled bowl until stiff peaks form.
  7. Fold one-third of the whipped cream into the cheesecake mixture to lighten it.
  8. Gently fold in the remaining whipped cream until fluffy and smooth.
  9. Spoon or pipe the filling onto the chilled crusts, filling almost to the top. Smooth the tops and refrigerate for at least 5 hours or overnight until fully set.
  10. Warm the Biscoff spread for a few seconds until pourable.
  11. Spoon a thin layer over each cheesecake cup and spread gently to the edges.
  12. Top with a half Biscoff cookie and a sprinkle of crushed cookie crumbs.
  13. Finish with a light drizzle of caramel sauce if desired.
  14. Chill for 15 more minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to five days. These cups can also be frozen before adding toppings.
