  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Begin by seasoning the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3 to 4 minutes per side until golden brown.
  3. Remove the chicken from the skillet and set it aside.
  4. Mix together BBQ sauce, honey, soy sauce, and minced garlic in a bowl.
  5. Toast the uncooked rice for 1 to 2 minutes in the same pan to enhance its flavor.
  6. Add chicken broth and half of the sauce mixture, stirring to combine.
  7. Return the chicken to the skillet, pouring the remaining sauce over the top.
  8. Cover the skillet and let it simmer on low heat for 15 minutes.
  9. Incorporate mixed vegetables if desired, cover, and cook for an additional 5 minutes until the rice is tender.
  10. Let the dish sit for 5 minutes before serving hot, garnished with chopped green onions.

Notes

For a spicier kick, add cayenne pepper or red pepper flakes to the seasoning. Marinating the chicken in BBQ sauce for a few hours can deepen the flavors.
