- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Begin by seasoning the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3 to 4 minutes per side until golden brown.
- Remove the chicken from the skillet and set it aside.
- Mix together BBQ sauce, honey, soy sauce, and minced garlic in a bowl.
- Toast the uncooked rice for 1 to 2 minutes in the same pan to enhance its flavor.
- Add chicken broth and half of the sauce mixture, stirring to combine.
- Return the chicken to the skillet, pouring the remaining sauce over the top.
- Cover the skillet and let it simmer on low heat for 15 minutes.
- Incorporate mixed vegetables if desired, cover, and cook for an additional 5 minutes until the rice is tender.
- Let the dish sit for 5 minutes before serving hot, garnished with chopped green onions.
Notes
For a spicier kick, add cayenne pepper or red pepper flakes to the seasoning. Marinating the chicken in BBQ sauce for a few hours can deepen the flavors.
