  • ¼ cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup caramel sauce
  • ½ cup toasted sweetened coconut flakes
  • ½ cup semisweet chocolate chips, melted
  • Additional caramel sauce (for garnish)
  • Toasted coconut flakes (for garnish)
  • Melted chocolate drizzle (optional)
  • Chocolate curls (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a 9-inch springform pan.
  3. Combine the chocolate cookie crumbs with the melted butter.
  4. Press the mixture into the bottom of the prepared pan.
  5. Bake the crust for 8–10 minutes and allow it to cool.
  6. Beat the softened cream cheese until smooth.
  7. Add the granulated sugar and beat for 2–3 minutes.
  8. Add the eggs one at a time, mixing until incorporated.
  9. Mix in the sour cream and vanilla extract until silky smooth.
  10. Pour half of the cheesecake batter over the prepared crust.
  11. Drizzle with half of the caramel sauce, toasted coconut, and melted chocolate.
  12. Spoon the remaining cheesecake batter over the layered filling.
  13. Top with the remaining caramel sauce, toasted coconut, and melted chocolate.
  14. Bake for 45–50 minutes until the edges are set and the center has a slight jiggle.
  15. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  16. Refrigerate for at least 4 hours or overnight for best flavor.
  17. Before serving, drizzle with warm caramel sauce, extra coconut, and melted chocolate.

Notes

Use room temperature ingredients for smoother mixing. Toast coconut flakes before adding for enhanced flavor. Chill overnight for the best texture.
