- 2 large eggs, room temperature
- 1 cup real buttermilk, room temperature

- 1 cup boiling hot water
- 1 cup canned evaporated milk
- 1 cup granulated white sugar
- 3 large egg yolks, room temperature
- ½ cup unsalted butter
- 1 teaspoon pure vanilla extract
- 1 ⅓ cups shredded sweetened coconut
- 1 cup premium pecans, finely chopped and lightly toasted
Instructions
- Preheat your oven to 175°C (350°F). Grease three 9-inch round cake pans.
- Sift together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, oil, and vanilla to the dry ingredients and beat until combined.
- Slowly stream in the boiling water and mix until smooth.
- Divide the batter among the prepared pans and bake for 25 to 30 minutes.
- Cool the cakes in the pans for 10 minutes before inverting onto wire racks.
- In a saucepan, whisk together the evaporated milk, sugar, and egg yolks off heat; add butter.
- Cook the mixture over medium heat until it simmers, stirring continuously.
- Fold in the vanilla, coconut, and toasted pecans.
- Allow frosting to cool to room temperature.
- Layer the cake, spreading frosting between layers and on top.
Notes
Ensure all ingredients, such as eggs and buttermilk, are at room temperature. Toast pecans for better flavor.
