Description

A rich chocolate cake layered with a decadent coconut-pecan custard frosting, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 cup granulated white sugar
  • 1 cup packed light brown sugar
  • ¾ cup premium unsweetened cocoa powder, sifted
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon fine sea salt
  • 2 large eggs, room temperature
  • 1 cup real buttermilk, room temperature
  • ½ cup vegetable oil or canola oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling hot water
  • 1 cup canned evaporated milk
  • 1 cup granulated white sugar
  • 3 large egg yolks, room temperature
  • ½ cup unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 ⅓ cups shredded sweetened coconut
  • 1 cup premium pecans, finely chopped and lightly toasted

Instructions

  1. Preheat your oven to 175°C (350°F). Grease three 9-inch round cake pans.
  2. Sift together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla to the dry ingredients and beat until combined.
  4. Slowly stream in the boiling water and mix until smooth.
  5. Divide the batter among the prepared pans and bake for 25 to 30 minutes.
  6. Cool the cakes in the pans for 10 minutes before inverting onto wire racks.
  7. In a saucepan, whisk together the evaporated milk, sugar, and egg yolks off heat; add butter.
  8. Cook the mixture over medium heat until it simmers, stirring continuously.
  9. Fold in the vanilla, coconut, and toasted pecans.
  10. Allow frosting to cool to room temperature.
  11. Layer the cake, spreading frosting between layers and on top.

Notes

Ensure all ingredients, such as eggs and buttermilk, are at room temperature. Toast pecans for better flavor.
