- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup gluten-free breadcrumbs
- 2 eggs, beaten
- 1 cup almond flour
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken pieces with salt and pepper.
- Set up a dredging station: place almond flour in one bowl, beaten eggs in another, and gluten-free breadcrumbs in a third.
- Dip each piece of chicken first in almond flour, then in eggs, and finally coat with breadcrumbs.
- Arrange the coated chicken pieces on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the chicken is crispy and cooked through.
- Mix together mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
- Toss the cooked chicken with the sauce until well coated.
- Serve hot, garnished with chopped green onions.
Notes
Feel free to adjust the spice level by changing the amount of sriracha. You can also substitute chicken with shrimp or vegetables for a variation.
