Ingredients

  • 1 cup Toasted Hazelnuts
  • 8 ounces Dark Chocolate (Chopped)
  • 4 tablespoons Unsalted Butter
  • 3 Large Eggs (Separated)
  • 1/4 cup Granulated Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1/2 cup Heavy Cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease the bottom and sides of your round cake pan.
  3. Cut a circle of parchment paper for the bottom of the pan and place it inside.
  4. Place the toasted hazelnuts in a food processor and pulse until finely ground.
  5. Fill a small pot with water and bring it to a gentle simmer, then melt the dark chocolate and butter over it.
  6. Combine the egg yolks, sugar, and vanilla extract, whisking until pale and thick.
  7. Pour the warm chocolate mixture into the egg yolks, whisking constantly.
  8. Fold in the ground hazelnuts gently.
  9. Beat the egg whites with salt until stiff peaks form, then incorporate them into the chocolate mixture.
  10. Whip the heavy cream until soft peaks form and fold it into the batter.
  11. Pour the batter into the prepared pan and smooth the top.
  12. Bake for approximately 25 minutes until set.

Notes

Serve at room temperature or chilled for different textures. Dust with cocoa powder before serving for a classic look.
