- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup sour cream
- 1/2 cup nacho cheese sauce
- 1/4 cup chipotle sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella
- 4 large flour tortillas
- Butter or oil for grilling
Instructions
- Cook the beef: Start by browning the ground beef in a skillet over medium heat. Drain excess grease, add the taco seasoning and 1/4 cup of water, and let it simmer for 5 minutes.
- Warm the tortillas: Warm the tortillas in a dry skillet or the microwave to make them easier to handle.
- Assemble the burrito: Lay one tortilla flat and layer it with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top it with shredded cheddar and mozzarella.
- Grill the burrito: Heat a skillet and sprinkle 2 tablespoons of shredded cheese on it. Place the burrito seam-side down and cook until the cheese melts and creates a crispy crust, flipping and repeating on the other side.
Notes
Let the burrito sit for a minute before slicing to allow the cheese to settle. Serve with extra sour cream or salsa for dipping.
