Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the beef: Start by browning the ground beef in a skillet over medium heat. Drain excess grease, add the taco seasoning and 1/4 cup of water, and let it simmer for 5 minutes.
  2. Warm the tortillas: Warm the tortillas in a dry skillet or the microwave to make them easier to handle.
  3. Assemble the burrito: Lay one tortilla flat and layer it with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top it with shredded cheddar and mozzarella.
  4. Grill the burrito: Heat a skillet and sprinkle 2 tablespoons of shredded cheese on it. Place the burrito seam-side down and cook until the cheese melts and creates a crispy crust, flipping and repeating on the other side.

Notes

Let the burrito sit for a minute before slicing to allow the cheese to settle. Serve with extra sour cream or salsa for dipping.
