  • 1/2 cup (120ml) heavy cream
  • 2 tsp gelatin powder, bloomed
  • 1 tsp vanilla extract
  • A few drops green food coloring (optional)
  • 1 1/2 cups (360ml) heavy whipping cream
  • 1/4 cup (30g) powdered sugar
  • 1 tsp vanilla extract
  • Fresh green grapes
  • Mint leaves
  • White chocolate curls
  • Crushed pistachios
  • Green grape glaze or syrup drizzle

Instructions

  1. Preheat your oven to 325°F (160°C) if you choose to bake the crust lightly.
  2. Combine graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
  3. Press the mixture firmly into the bottom of a springform pan to create a thick buttery crust.
  4. Bake for 8–10 minutes, then cool completely.
  5. Beat softened cream cheese and sugar together until smooth and creamy.
  6. Blend in green grape purée, vanilla extract, and heavy cream until silky.
  7. Stir the bloomed gelatin into the mixture until fully dissolved and smooth.
  8. If desired, add a few drops of green food coloring for a brighter bakery-style look.
  9. Pour the cheesecake filling over the crust and smooth the top evenly.
  10. Refrigerate for at least 240–360 minutes until fully set and chilled.
  11. Whip heavy cream, powdered sugar, and vanilla until thick fluffy peaks form.
  12. Spread or pipe the whipped cream beautifully over the cheesecake.
  13. Top generously with fresh green grapes for that luxurious fruit-loaded finish.
  14. Decorate with mint leaves, white chocolate curls, crushed pistachios, and a glossy grape syrup drizzle.
